These oatmeal biscuits make for a very quick and delicious way to utilise leftover ingredients. They also make excellent small gifts or as a children’s snack.
1 cup of spread or butter
2 medium eggs
1 cup of brown sugar
3 cups of oats
2 cups of plain flour
2 teaspoons of cinnamon
-Start by cutting the fruit and nuts into tiny pieces.
-Then combine the softened butter with the chopped fruit
-Add all the dry ingredients to the above mixture and add in the eggs while mixing with your hands.
-Preheat your oven to 190C/fan 170C
-Once you have mixed all the ingredients into sticky dough, form little balls about two inches in diameter.
-After all the balls are formed; flatten them with a spatula to make them look more like cookies.
-Place formed biscuits in the preheated oven for about 20 minutes. They do not need a long time or a high temperature since you do not want to burn the oil or the sugar.
-Leave them to cool on the windowsill or in a cool place for about an hour.
